Pickled red onions are a game changer. If you have never tasted them, then you are in for a treat. They are extremely healthy and super versatile. Add them to burritos, tacos, curries, burgers, sandwiches, salads... literally anything. They are tangy, crunchy and just all-round wonderful.
Mix the water, Apple Cider vinegar, salt, sugar and peppercorns together in a jug. Stir until the salt and sugar has dissolved.
Cut the red onions into thin slices.
Add the thinly sliced onions to a strainer.
Pour boiling water over the onions.
Placed the onions in a jar big enough that will hold them easily.
Pour the brine over the onions, so that they are nicely covered.
Place them in the fridge.
The onions will go completely pink the next day.
Serve them with your favourite meal for an extra crunch, tang and flavour.
