I first made this salad last December for our Christmas ‘braai’, and it was an instant hit! Since then, I’ve been making it regularly—it hits all the right notes. Spicy, tangy, sweet, salty, creamy, and crunchy, it’s a wonderful and easy recipe to whip up.

- Fresh Corn: Use fresh corn on the cob for the best flavour and texture. You can cut the kernels off the cob and then fry them in a pan or grill the corn over a fire until tender, then cut the kernels off the cob.
- Fresh double thick yoghurt: Creamy yoghurt adds richness and flavour to the salad, while also helping to bind the ingredients together.
- Lime Juice: Tangy lime juice adds a burst of citrusy flavour to the salad, balancing out the sweetness of the corn and the creaminess of the yoghurt.
- Fresh Chili’s: Spicy fresh chili’s adds heat and depth of flavour to the salad, giving it that signature Mexican street corn taste.
- Cilantro: Fresh cilantro adds a burst of freshness and herbaceous flavour to the salad, complementing the other ingredients perfectly.
- Feta/Cotija Cheese: Salty and crumbly cotija cheese is the perfect finishing touch for this salad, adding a burst of flavour and texture.

Did you know that Mexican street corn, also known as elote, has been enjoyed in Mexico for centuries? It’s a popular street food snack made by grilling or boiling corn on the cob, then slathering it with mayonnaise, cotija cheese, chili powder, and lime juice. Today, it’s enjoyed all over the world and has become a staple at backyard barbecues and summer cookouts.
Recipe
This spicy street corn salad is perfect for a braai or any gathering. It is sweet, salty, spicy & zesty. The lime just completes this salad beautifully. A real crowd pleaser!
Cut the corn carefully off the cob.
Deseed the peppers and chillis and dice them small
Fry the corn, peppers and chillis in olive oil over low heat and let the corn char a bit.
I added loads of Ina Paarmans braai and grill spice. But paprika is the star. If you don't have Ina Paarmans braai and grill spice, you can add any Mexican type spice like paprika. And add salt and pepper.
Add some garlic towards the end of frying the corn.
Cut up the red onion and cilantro. Add to a salad bowl. Then add your corn mixture to bowl.
Let it cool.
Mix feta and yogurt and add that to the bowl as well. Squeeze in some lime, stir and it is done.
Decorate with some chilis and leave in the fridge the chill. Enjoy!
