How to Make Roasted Carrot and Garlic Spread

Step 1: Preheat Your Oven

Preheat your oven to 400°F (200°C). This ensures that your carrots and garlic will roast evenly and develop a beautiful caramelized flavour.

Step 2: Prepare the Vegetables

Peel and chop the carrots into medium-sized pieces. Peel the garlic cloves and slice the onion. Place the carrots, garlic, and onion on a baking sheet.

Step 3: Season and Roast

Drizzle the olive oil over the vegetables, and sprinkle with salt, pepper, and paprika. Toss everything together to ensure the vegetables are evenly coated. Roast in the preheated oven for 25-30 minutes, or until the carrots are tender and slightly caramelized.

Step 4: Blend the Ingredients

Once the vegetables are roasted, transfer them to a blender or food processor. Add the butter and water, and blend until smooth. You can adjust the consistency by adding more water if necessary.

Step 5: Taste and Adjust

Taste the spread and adjust the seasoning with more salt, pepper, or paprika if needed. The spread should be creamy and well-balanced, with a nice blend of sweet, savory, and smoky flavours.
