Homemade chilli sauce! This is a real heat treat! Cayenne peppers, Red Thai chillies and Habenero chillies make up this SPICY chilli sauce. With a secret ingredient that will transform this sauce into your new favourite hot sauce.

75gCayenne chillies
50gRed Thai chillies
50gHabanero Chilies
1White onion
3Small red and orange peppers
3Garlic cloves
1cupApple Cider Vinegar
½cupOlive oil
½cupWater
¾cupBrown sugar
3Bay leaves
2tspSmoked paprika
1tspGinger
1 ½tspSea salt (or to taste)

Prepare all your ingredients.

Cut it in half with a knife, length-wise. And remove the seeds with a spoon. If you like extra spice, you can leave the seeds! Be warned... it is HOT! I like to take the seeds out and planting them in my garden.

Roughly chop your onions, garlic, ginger, chilis & peppers.

Add the oil to a pot and fry the onions for 3 -10 minutes. Add the garlic, ginger, chilis and peppers and spices and fry for 2 minutes longer. Add your vinegar, water & sugar and bring to a boil. Let it simmer on low heat for about 30 minutes. Once cooked and chilis are soft, remove from the pot and let it cool slightly.

Add your chili mixture to a blender and blend it until smooth and creamy.

Find a beautiful jar or bottle to put your sauce in. With a funnel, pour the sauce into the bottel. Make sure it is completely cooled when putting on the lid. Put it in the fridge and enjoy it on absolutely everything!
You can double the batch and keep in sterilised jars.
