I never know what to do with carrots. I love this recipe as it is easy and cheap. And it actually tastes amazing. Buttery, smooth and perfect on fresh ciabatta bread.
Peel the carrots and slice them into coin sized pieces.
Fry the onion over low heat with a little bit of sea salt to get them a little caramelised. they are ready after about 10 minutes and they are slightly browned.
Add the carrots and garlic and fry them until the carrots are cooked and a little brown on the edges. Add paprika, salt and pepper to taste. You can add a teaspoon of honey as well and some cayenne pepper as well.
Add a little bit of water and blend the carrot mixture until smooth.
Add the mixture to a jars and enjoy! 🙂
